Easy & Delicious Baked Oatmeal

One of my favorite local coffee shops makes theee best baked oatmeal and it had me thinking I should try whipping some up at home! This baked oatmeal recipe is easy, delicious, filling, and a real crowd pleaser! I used blueberries, but feel free to swap out for your favorite fruit!
Blueberry Baked Oatmeal
Easy and delicious baked oatmeal sure to make a big splash at any breakfast or brunch!

rolled oats -
1
cup
brown sugar -
2
tsp
ground cinnamon -
2
tsp
baking powder -
1
tsp
salt -
2
eggs -
1
cup
milk -
1/2
cup
melted butter -
2
tsp
vanilla -
3/4
cup
blueberries
or fruit of choice

Preheat the oven to 350 degrees F

Mix together oats, brown sugar, cinnamon, baking powder, and salt in a large bowl.

Beat in eggs, milk, melted butter, and vanilla extract. Stir in dried blueberries

Spread into a 9×13-inch baking dish.

Bake in the preheated oven until top is golden, about 40 minutes. Serve [with optional milk on top] and enjoy!
