15 Best Almond Flour Recipes (Easy & Gluten-Free)


This list has my best almond flour recipes in one place: bread, muffins and scones, a savory quiche crust and crackers, then cookies and brownies. All of them are gluten-free (if a recipe uses oats, choose certified gluten-free oats).

Why I Love Baking With Almond Flour
Almond flour is simply blanched almonds ground into a fine powder. (Blanched means they’ve been quickly heated with water and the outer skins removed.) Compared to white flour made with wheat, it’s higher in protein, fiber and healthy fats and much lower in carbs, so baked goods made with it keep you full longer and don’t send your blood sugar on a roller coaster.
It also makes baking easier in some ways. There’s no gluten to overwork, so you can’t end up with tough muffins or cookies. Stir it together and you’re done.
Almond Flour vs. Almond Meal
This one trips people up, so let’s clarify almond flour vs. almond meal.
Almond flour is made from blanched almonds (skins removed) and is finely ground. Almond meal is made from whole almonds with the skins on and is coarser. For the recipes below, use superfine blanched almond flour unless the recipe says otherwise.
Almond meal makes baked goods denser and grainier. Almond meal is often the result of making almond flour at home or what’s leftover from making almond milk at home. I haven’t tested all of these recipes with almond meal as I use blanched almond flour. If you choose to substitute it just know the result might be dense and grainy.

FAQs About Almond Flour Recipes
Can I substitute almond flour for regular flour?
Not one-to-one. Almond flour has no gluten and much more fat and moisture than wheat flour, so swapping it into a regular recipe usually gives you flat, oily results. Use recipes developed for almond flour, like the ones above.
Is almond flour healthier than regular flour?
For most people, yes. It’s higher in protein, fiber and healthy fats, lower in carbs and naturally gluten-free. It is higher in calories, so baked goods made with it are more filling.
Why did my almond flour baked goods turn out flat or greasy?
The most common culprit is almond meal instead of blanched almond flour. Measuring by scooping can also pack in too much flour. Spoon it into the measuring cup and level it off, or use a kitchen scale.
How should I store almond flour?
Keep it in an airtight container in the fridge for up to 6 months or the freezer for up to a year. The natural oils can go rancid at room temperature.
Are almond flour recipes keto?
Many are low in carbs, but not all of the recipes here are keto because some use maple syrup, honey or bananas. Check each recipe card for the ingredients.
