These delicious fruits are also welcome right in my tummy 😆 Whether you’re hosting, attending a friend’s cookout this Summer, or just wanting a juicy recipe for a Wednesday night at home – we are sharing the yummiesttttt pineapple recipes for this Spring + Summer [or anytime of year!] 🍍 You may be surprised how many courses you’ll be able to make!

Pineapple Salsa

  • 2
    cups
    fresh pineapple, diced small
  • 1
    red chili pepper (optional)
  • fresh green onion, measure with your heart! (a little goes a long way!)
  • juice of one fresh lime

  1. Chop and combine all ingredients in a small bowl, serve chilled.

Pineapple Chicken Bowls

  • 1/3
    c
    soy sauce
  • 1/3
    c
    pineapple juice
  • 1/3
    c
    tomato paste
  • 1
    T
    honey
  • 1
    T
    fresh grated ginger
  • 1
    T
    cornstarch
  • 2
    cloves
    fresh garlic

Serve With:

  • 4
    c
    cooked white rice
  • pineapple salsa
  • fresh cilantro
  • lime wedges
  • sesame seeds
  • salt & pepper

Chicken:

  • 2
    lbs
    cooked chicken breast, cubed
  • olive oil
  • salt & pepper

  1. Slice chicken into bite-size pieces, and cook on stove over medium-high heat with olive oil until slightly crispy. Salt & pepper to taste. Set aside.

  2. In a bowl, whisk together all sauce ingredients. Pour over chicken and mix well to coat chicken.

  3. Serve over a bowl of cooked rice with pineapple salsa, lime wedges, cilantro, and sesame seeds. Enjoy!

Ginger Pineapple Turkey Stir Fry

A little spice and sweetness make an explosion of flavors in this stirfry

  • 3
    tbsp
    olive oil
  • 1 1/2
    lb
    ground turkey (or chicken)
  • 3
    tbsp
    salted butter
  • 2
    tbsp
    Thai red curry paste
  • 4
    cloves
    garlic, minced
  • 1
    tbsp
    fresh ginger, chopped
  • 2
    whole
    bell peppers, sliced
  • 1 1/2
    cups
    pineapple, chopped
  • 1
    cup
    cashews, whole
  • 1/2
    cup
    soy sauce (or tamari)
  • 2
    tbsp
    honey
  • 1/2
    cup
    cilantro, chopped
  • 4
    whole
    green onions, chopped
  • 1/4
    cup
    basil, chopped

  1. In a large skillet, combine the oil and turkey. Cook over medium heat, breaking up the meat as it cooks until browned, about 5 minutes. Add the chili paste, butter, garlic, and ginger. Cook 2 minutes, until the butter browns and the turkey gets crispy.

  2. Mix in the peppers, 3/4 cup pineapple, green onions, and cashews. Cook another 2-5 minutes. Pour over the soy sauce and honey. Cook until the sauce coats the turkey, 2-3 minutes. Remove from the heat.

  3. In a bowl, toss 3/4 cup pineapple with the cilantro and basil.

  4. Serve the turkey, peppers, and cashews over bowls of rice. Top with the pineapple/cilantro/basil. Enjoy!

Pineapple Coconut Loaf Cake

Cook Time 1 hour 10 minutes

  • 1 1/2
    cups
    sweetened shredded coconut
  • 1/2
    stick
    unsalted butter, room temperature, plus more for pan
  • 3
    large
    eggs
  • 1
    cup
    sugar
  • 1 1/2
    cups
    flour
  • 1/2
    tsp
    baking soda
  • 1/2
    tsp
    salt
  • 1
    cup
    sour cream
  • 1 can
    20oz
    pineapple chunks, drained very well!

  1. Sprinkle coconut on cookie sheet in a single layer, bake until lightly toasted, tossing occasionally, 6 to 10 minutes; set aside.

  2. Butter and flour a 9-by-5-inch (8-cup) loaf pan; set aside.

  3. In a mixer on high speed, beat butter and sugar until light and fluffy. Add in eggs and beat well.

  4. On low speed, add flour, baking soda and salt.

  5. Add in sour cream, be careful to not overmix.

  6. Open up your can of pineapple chunks and drain them well. Use a paper towel to get all the moisture out, best you can.

  7. Using a rubber spatula, fold pineapple and 1 cup coconut into batter. Spoon into prepared pan, and smooth top; sprinkle with remaining 1/2 cup coconut.

  8. Bake until a toothpick inserted in center comes out clean, 65 to 70 minutes (cover pan with foil halfway through – so your coconut does not burn!)

  9. Let cake cool in pan 15 minutes. Remove from pan, and transfer to a wire rack to cool completely.

To store, keep it wrapped in plastic – room temp. Will stay good for 2 days! Recipe Credit: Martha Stewart

3 Ingredient Pineapple Dessert

  • 1
    [20 oz] can
    Crushed Pineapple in Juice
    undrained
  • 1
    pkg
    Vanilla Flavor Instant Pudding
  • 1
    cup
    Whipped Topping
    thawed

  1. Mix pineapple and dry pudding mix. Gently stir in whipped topping. Refrigerate for an hour before serving.

  2. Top with shredded coconut and enjoy!

Pineapple Margarita

A tropical twist on a classic cocktail! Cheers to sippin’ on something fruity this Summer!

  • salt for rim
    or swap for Tajín! [or combine!]
  • 2
    oz
    pineapple juice
  • 2
    oz
    tequila
  • 3/4
    oz
    fresh lime juice
  • 3/4
    oz
    triple sec
  • limes or pineapple slices for garnish
    optional

  1. Combine all ingredients in a shaker

The Best Pina Coladas

    White Rum
  • 6

    Cream of Coconut
  • 6
    oz
    Pineapple Juice
  • 1/2
    Cup
    Frozen Pineapple Chunks
  • 4
    oz
    Golden or Spiced Rum
  • 4
    Cups
    Ice
  • Pineapple Wedges for garnish

  1. Place the white rum, coconut cream, pineapple juice + chunks, golden rum, and ice in a blender. Process until totally blended.

  2. Pour into glasses and garnish with pineapple wedge!
