Rotisserie Chicken BBQ Sandwiches | Elizabeth Rider

These Rotisserie Chicken BBQ Sandwiches are a quick weeknight meal that feels like comfort food but takes almost no effort.
This is more of an assembly idea than a recipe, which makes it perfect for busy nights. Especially, when you want something easy, satisfying, and totally crowd-pleasing. Using a store-bought rotisserie chicken, your favorite BBQ sauce, and toasted brioche buns, you can have dinner on the table in 10 minutes or less.
Great for summer dinners, casual gatherings, or even a last-minute lunch idea. These sandwiches are kid-friendly, customizable, and easy to make gluten-free if needed.
What You’ll Love About Rotisserie Chicken BBQ Sandwiches
- Dinner in 10 Minutes: No cooking required. All you have to do shred, toss, and assemble. This makes it the perfect recipe for those hot summer nights when you don’t want to heat up the kitchen.
- Super Satisfying: The combo of warm BBQ chicken, crisp lettuce, and topped on a toasted brioche bun is pure comfort.
- Affordable: Made with pantry staples and store bought rotisserie chicken.
- Customizable: Swap in gluten-free buns or go bun-less for a BBQ bowl version. Feel free to add melty dairy-free cheddar cheese if needed.

Ingredients You’ll Need
- Rotisserie chicken: I suggest you pull off the meat and shredded while warm for easy handling. Once its chilled, removing the meat gets a little trickier.
- Your favorite BBQ sauce: I really enjoy the Kinder brand BBQ sauce, but any brand or flavor you love works. It doesn’t matter if its smoky, sweet, spicy. It’s all delicious.
- Brioche burger buns: Brioche buns are great because they are soft and slightly sweet, perfect for BBQ.
- Butter lettuce or romaine: Adds a fresh, crisp bite to overset the soft bun and savory BBQ flavor.
- Cheddar cheese slices: Feel free to leave off or swap with dairy-free cheese if needed.

How to Make Rotisserie Chicken BBQ Sandwiches
- Shred the Chicken: Pull the meat from a store-bought rotisserie chicken. Discard skin and bones or save to make my favorite homemade chicken stock.
- Add BBQ Sauce: Place the shredded chicken in a mixing bowl and toss with your favorite BBQ sauce. For extra flavor, warm the chicken and BBQ sauce together on the stove or in the microwave before assembling.
- Toast the Buns: Slice the brioche buns and toast them in a toaster oven. In the last 30 seconds, add a slice of cheddar to the top bun to melt.
- Assemble: On the bottom bun, layer lettuce and a generous scoop of BBQ chicken. Add the cheesy top bun and serve immediately.
Tips & Variations
- Make it Gluten-Free: Use gluten-free burger buns or wrapped with large lettuce leaves.
- Make it Dairy-Free: Skip the cheese or use your favorite plant-based slices.
- Add Crunch: Top with your favorite slaw recipe or crispy onions for texture. This cilantro-lime slaw is one of my favorites.
- BBQ Bowl Option: Serve over shredded greens or rice instead of a bun.
- Pair with Sides: Pair these BBQ chicken sandwiches with pasta salad or this easy three bean salad.
